Try this Sfakian Pies “Sfakianés pétes” delicious gourmet treat that has rather humble origins as a portable meal for Sfakian goatherders in Crete.
Ingredients (for 12 pies)
For the dough:
200 gr tepid water
250 gr tepid milk
1 tbs salt
50 ml raki (if not available, replace with water)
50ml olive oil
1 kg all-purpose flour
For the cheese filling:
300 gr sweet mizithra cheese (if not available, replace with ricotta)
300 gr sour mizithra cheese (if not available, replace with ricotta)
Honey, apple geranium and roasted pine nuts or with honey and walnuts for serving.
Make a soft dough mixing all dough ingredients for 10 min and let it rest for 30 min.
Divide the dough into 12 pieces and roll each into a ball. Let it rest again for 15 min.
Flatten each one of the dough balls into a round flat “pancake” of about 10 cm diameter.
Divide the cheeze into 12 balls.
Put one cheese ball in the center of a dough “pancake” and close the sides over it.
Start working softly the cheese towards the edges, until you have a flat pancake once again of 8 cm diameter. Let it rest for 15 min.
Work them again until you have a flat pancake of 20 cm diameter.
Fry in a crepe or non-stick frying pan using a drop of olive oil for about 2 min on each side.
Serve with honey, apple geranium and roasted pine nuts or with honey and walnuts.
